As it so frequently happens, it got to be about 4:00 this afternoon, and I had nothing thawed out for supper. The only time in my adult life when this did NOT happen was for the five weeks after we got home from Kansas last summer, because I had spent several miles of cross-country travel making up a five-week menu plan. I loved having the menus made out, but I found my grocery bills were higher that way. So I am back to fumbling around in the kitchen at the last minute, trying to figure out something to feed my family, something nutritious and quick. Since many of you are into your wintry weather, I thought you might appreciate this quick potato soup recipe. It is warm and thick and is wonderful topped with butter-and-garlic croutons. This recipe makes enough to feed six of us, plus left-overs.
Sally's Potato Soup
8 LARGE baking potatoes
1/2 C chopped onion
4 1/2 C chicken broth
6 T butter or margarine
6 T flour
3 C milk
dash white pepper
1/2 t salt
1 t dill (optional)
Peel and slice the potatoes and place them in a large soup pot with the broth, chopped onion, and dill, if desired. Bring to a boil and cook for 10 minutes or so, until potato slices break easily. In the meantime, melt the butter in a saucepan over medium heat, and add the flour, salt and pepper. Cook and stir for a couple of minutes, then add the millk all at once. Continue cooking and stirring until the white sauce thickens and begins to boil. Cook for 1-2 minutes more, and remove from heat. When the potatoes are done, mash them well in the same pot, with a potato masher, or if you like your soup very smooth, put it through the blender. Add the white sauce and stir well. For variation, add cheddar cheese and/or cooked chopped broccoli. Top with croutons or saltine crackers.
wow - that sounds great...I think I have the stuff to make that and I'm going to try. Makes me kind of hungry right now...
ReplyDeleteI'll be working on the email...we were gone Friday and Saturday (for the third time in October) and man does that eat up my free time! Loved the chance to think about some of your responses, though. Truly feels like "iron sharpening iron" because I'm forced to weigh my convictions, thoughts and opinions with Scriptural back-up. Not just "Tori's words", but are they God's words?
Anyway - hope your Monday was good...for the first time in weeks our Monday was actually very smooth.

Did you know that tomorrow is potato soup night at our house or what!? I love it; it's practically free and sooooo good! Your recipe is pretty similar to mine, though I never thought to put delicious treats on the top. thanks for the idea.
ReplyDeleteHi there. In reply to your comments over on my blog, we do not do potato soup once a week but I do have a master plan. My husband only is paid once a month so I have to budget or we eat beans the last week. I like beans, but not that much. I find one of the best ways to cut the bill (besides planning) is when you are cooking with meat, use half as much. Like if I am making a casserole, I'll just put in a handful or something. It's the whole illusion of meat. But we don't normally do the meat, starch, veg meal. We are more one dish people. I am queen of the skillet meal served over rice/quinoa/couscous/noodles. MMMMM The best part is I don't have kids who are afraid of foods that are mixed together! You can email me if you want and I can tell you more about my plan and all. ReplyDeleteI think I have had potato soup only once or twice in my life as a young person and loved it. Have never tried making it. Will have to try this as a side dish and see how everyone reacts to it. I have a 4.5 wk. plan and want to make it a whole 5 wks as I think that would work better - potato soup might just get added to the plan. Thanks Sally! ReplyDeleteYour recipe sounds SO good! We had a crock pot version of potato soup that my family enjoys, just a few short days ago. Your recipe really seems like a good variation, especially with the potatoes all mashed up and the crunchy croutons on top. If it wasn't 10:30 PM, I might whip up a batch right now! Next time I make soup, I'm going to try your marvelous recipe.
